So the second specialty is, as you might have expected a gorgeous dessert: black chocolate truffles with mascarpone and cactus fruit liqueur… I am already counting calories here 🙂
Black Chocolate Truffles with Mascarpone and Cactus Fruit Liqueur
150 grams of raw chocolate
60 ml cream
125 grams mascarpone
40 grams of cocoa powder
2 tablespoons of cactus fruit liqueur (you can substitute with any favorite liqueur)
Stir the chocolate steam with cream. Take off the heat and add the mascarpone. Mix until you get a smooth paste. Allow to cool to room temperature and then place the mixture in the refrigerator for at least two hours.
When the mixture has hardened, form balls and powder them with cocoa. For variety you can also use grounded pistachios, grounded almonds, crushed rose petals, grounded hazelnuts, cocoa nibs or whatever pleases to you.
Keep them refrigerated until serving.
