Cucumber Sorbet for Hot Summer Afternoons

I have a few of my own recipes to post in the coming weeks but I couldn’t help myself from sharing this recipe I actually plan to make asap. But, if I will not move quick enough, you should not be deprived of this wonderful treat that should be the perfect pair for a refreshing herbs lemonade on a hot summer afternoon.  And it’s made from just two ingredients with the help of an ice-cream machine.

I really like the combination of lemon and cucumber although I do not eat cucumbers usually, not even in salads. But fresh slices in a lemonade are just perfect for me.

INGREDIENTS:

  • 1 1/2 pounds cucumbers (after being peeled and seeded), peeled, seeded
  • 3 Tbsp fresh squeezed lemon juice
  • 1 cup granulated sugar
