Tomato, Ricotta and Herbs Summer Tart

We have a great source of garden tomatoes and every time we get a basket I keep thinking what to do with them… I hate when food spoils but sometimes I not home very often or I have no wish to eat the same things from the fridge and prefer to order some sushi. But this pie, with tasty garden tomatoes and some home-made ricotta we got this weekend. I bet it will be delicious!

INGREDIENTS

For the Crust

  • 1/2 cup (4 ounces) cold unsalted butter, cut into small cubes
  • 1 1/2 cup all-purpose flour
  • 2 teaspoons granulated sugar
  • 1/2 teaspoon salt
  • 1/3 cup cold buttermilk
  • For the Filling

  • 2 tablespoons olive oil
  • 1 yellow onion, peeled and sliced
  • 4 garlic cloves, skin removed and cloves smashed
  • 2 teaspoons fresh thyme
  • about 2 pints cherry tomatoes
  • 4 large eggs
  • 1/2 cup whole milk
  • sea salt and fresh cracked black pepper
  • 1 heaping cup ricotta cheese
  • 1/4 cup coarsely chopped fresh parsley
