I love fruit tarts. They are sweet and sour and light and delicious. And this one seems to be better that any other I have ever tried.
Ingredients:
For the Crust:
1 1/4 cup unbleached white flour
1/4 teaspoon salt
8 tablespoons frozen, unsalted butter, cut into small pieces
1/4 cup plain Greek yogurt
1/4 cup ice-cold water
2 teaspoons lemon juice
For the Filling:
3 1/2 cups fresh strawberries, washed, hulled, and sliced
1/2 cup ground almonds
1 tablespoon flour
1/4 cup sugar, plus more for dusting
For the Glaze:
1 egg yolk
1 teaspoon water
