This weekend I wanted to cook something light and delicious and I found this recipe on Gimme Some Oven. I gave it a try and it tuned out to be absolutely delicious. I replaced the bread crumbs with Moroccan couscous and I was very satisfied with the result (it was also very appreciated by my guest).
Cilantro Lime Baked Shrimp
Ingredients
- 2 lb. raw shrimp, peeled and deveined
- 3 cloves garlic, minced
- zest and juice of 1 lime
- 1/2 tsp. cumin
- salt and pepper
- 2 Tbsp. melted butter
- 1/4 cup Panko bread crumbs – I used couscous instead of bread crumbs
- 1/4 cup chopped fresh cilantro
- (optional garnishes: additional lime slices and fresh cilantro)
