Project Fairytale: Baked Shrimp with Lime and Cilantro

This weekend I wanted to cook something light and delicious and I found this recipe on Gimme Some Oven. I gave it a try and it tuned out to be absolutely delicious. I replaced the bread crumbs with Moroccan couscous and I was very satisfied with the result (it was also very appreciated by my guest).

Project Fairytale: Baked Shrimp with Lime and Cilantro

Cilantro Lime Baked Shrimp

Prep Time: 10 minutes

Cook Time: 15 minutes

Total Time: 25 minutes

 

Yield: About 4 servings

Ingredients

  • 2 lb. raw shrimp, peeled and deveined
  • 3 cloves garlic, minced
  • zest and juice of 1 lime
  • 1/2 tsp. cumin
  • salt and pepper
  • 2 Tbsp. melted butter
  • 1/4 cup Panko bread crumbs – I used couscous instead of bread crumbs
  • 1/4 cup chopped fresh cilantro
  • (optional garnishes: additional lime slices and fresh cilantro)
