I was missing a great salad recipe. And this one seems to do th trick. I only have to research a little about the coconut sugar and I should be prepared to cook something similar this weekend. I cannot wait 🙂
Ingredients
- 100 g rocket
- 100 g wild rocket salad
- 10 mint leaves
- 3 tbsp. coconut sugar
- ¼ cup apple cider vinegar
- 4 peaches
- 120 g creamy feta
- 6 slices prosciutto
- 50 g toasted walnuts
- 2 tbsp. rice bran oil for cooking
