The past weekend was all about spinach. I used it as a side dish, mixed it in pasta, made pancakes with spinach and cheese and even ordered it at a restaurant. But the best combination is with eggs (love the omelette with Danish white and spinach). And when I saw this recipe on Top With Cinnamon I just thought: hmmm, another gorgeous breakfast idea with my favourite ingredients. I’ll try it next weekend but I am convinced it’s delicious!!
