I really love cod fish and I love it baked in the oven with different herbs and served with green beans and some garlic. But this recipe, with a luxurious crust and a delicious sauce from the sound of it might be even better than my usual, no-fuss recipe. I have a new weekend homework 🙂
INGREDIENTS
You need evenly sized bits of cod, so they’re all perfectly cooked at the same time, and chunky fillets are better than thinner pieces (the cooking time here is for thick pieces).
- 4 tablespoons olive oil
- 150g thick fillets of cod
- 300g white crab meat
- 150g fresh white breadcrumbs
- Finely grated zest and juice of 1 lemon
- 75g butter, melted
- Leaves from 4 sprigs tarragon, chopped
- 2 tablespoons chives, chopped
- ½ tablespoon parsley, finely chopped
To serve:
- Green beans, boiled waxy potatoes and a green vegetable or watercress salad
- Lemon wedges
