Hello! The middle of this week requires a fresh and very colorful salad 😀
So, here we go: I found this beautiful recipe on Proud Italian Cook and I feel a sudden urge to go to the farmer’s market and get myself some squash, some zucchini and heirloom tomatoes. I love the fact that there are no exact instructions or quantities, just add whatever you like more and mix them together. And relax with a glass of ice-cold white wine.
Ingredients:
- ribbons of yellow squash and green zucchini
- sliced mini heirloom tomatoes of various colors
- red and orange pepper strips
- peas
- grilled corn
- dots of creamy goat cheese
- crunchy hazelnuts
- vinaigrette
