I have a really special relationship with potatoes, one of my favourite memory from childhood is when my mother or grandma were heating mashed potatoes on the stove (no microwave back then) and some of it got burned and stuck to the pan. That was my favourite thing ever, I always demanded to have that part and just loved the taste. And baked potatoes are the thing that remind me most of that taste… But these baked potato skins should be a lot better, especially with bacon and spring onions. #nomnom

Ingredients
- 6 small to medium sized russet baking potatoes (total 3 pounds)
- Olive oil
- Canola oil or grapeseed oil
- Kosher salt
- Freshly ground pepper
- 6 strips of bacon
- 4 ounces grated cheddar cheese
- 1/2 cup sour cream
- 2 green onions, thinly sliced, including the greens of the onions
