I actually came upon this recipe a while ago, first thought the noodles were classical pasta (featuring wheat or some other type of flour) and thought it looked amazing. I saved the picture and only last week I checked it out, and realized it’s actually something different from what I have initially imagined. The noodles are sweet potatoes spirals and the sauce is made from water, cashew and garlic (no cream!!!). All healthy and vegan apparently and I cannot wait to try it this weekend 🙂
