I am summoning the warm summer days through this dessert, hopefully they will come to us. In the last weeks after every beautiful and sunny day, came a week of storms and rain and cold that reminds us that spring is not over and summer is not yet here. But we are eagerly waiting for it and would do anything to convince it to come sooner.

SUMMER BERRies GALETTE
Ingredients:
For the dough
- 1/4 cup ice water
- 1 cup all purpose flour
- 1/4 tsp salt
- 6 tbsp unsalted butter, cold and cut into 1/4 inch cubes
For the filling
- ~ 2 cups berries of your choice
- 1/2 of a lemon
- 3 tbsp granulated sugar
- 1 egg yolk
- 1 tbsp cream
