It’s really cold outside, not your usual sunny October days and everyday I feel the need to eat a hot soup to feel confortable. Because, during the cold, rainy days, food should do just that: bring confort and warm your soul. And noodle soup is among my favourite quick fixes, I know this will not be appreciated, but I often prepare those instant ones that are so deliciously artificial. But this time, I will make my own. And I will use the below recipe, found on The Woks of Life. And it should be done in 15 minutes!!!

Ingredients
- 2 tablespoons oil
- 3 garlic cloves, chopped
- 1 tablespoon fresh ginger, grated
- 3 tablespoons Thai red curry paste
- 8 oz. boneless chicken breast or thighs, sliced
- 4 cups chicken broth
- 1 cup water
- 2 tablespoons fish sauce
- ⅔ cup coconut milk
- 6 oz. dried rice vermicelli noodles
- 1 lime, juiced
- Sliced red onion, red chilis, cilantro, scallions to garnish
